Educational Goals
With a focus on integrating the specialized knowledge and skills to maintain and improve human health with an expertise in food safety and security and food culture, the program delivers education and research designed for students to address the most fundamental of issues for human survival, the challenges of food and health in an increasingly globalized food system by developing the skills to consider and analyze issues from multiples perspectives, well-rounded judgement, and creativity.
Scientifically explore the challenges of food and health from nutritional and international perspectives.

Improving diet and nutrition is a global challenge. Domestically we face such problems as lifestyle-related illnesses caused by unhealthy diets, food safety issues, and food-import dependency. Problems also abound abroad, with food shortages in developing countries being one example. The world requires professionals with the ability to not only make sound judgements by combining their knowledge and skills, but also address these problems from a global perspective.
With its small-group instruction, our program prepares students for the National Examination for Registered Dietitians. Students graduate as food professionals able to find solutions to the challenges of food and health at home and abroad.
- Obtaining the national qualification of Registered Dietitian
- By graduating from this program with the required credits, students become a licensed dietitian and qualify to take the National Examination for Registered Dietitian.
To become a licensed Registered Dietitian, students are required to take the National Examination for Registered Dietitian at the end of their planned graduation year.
